Saturday Recipes! Spinach Mushroom Lasagna

This is one of my favorite recipes! So i wanted to pass it along. It’s oh so gooey and yummy and the best comfort food in the world!


16 oz cottage cheese

1 ½ cup shredded mozzarella — divide 1 c. and ½ c.

1 egg

10 oz frozen chopped spinach, thawed and drained

1 can cream of mushroom soup

1 jar sliced mushrooms

1 16 oz jars spaghetti sauce

1, 8 oz box lasagna uncooked

13 x 9 x 2 in. pan


1. Heat the spaghetti sauce up in a pan, add in cream of mushroom soup and cook til well blended. Add half of mushrooms in the jar.

2. Thaw spinach (usually a minute or two in the microwave. make sure you drain and squeeze excess water from the spinach)

3. Mix, cottage cheese, 1 cup of shredded cheese, remaining mushrooms for jar, spinach and egg (Optional) together.

4. Spread spaghetti sauce along bottom of baking pan

5. Add uncooked lasagna noodles

6. Top with cheese mix

7. Repeat 3 times or until you run out of stuff.

8. Top with leftover shredded cheese

9. Cover with foil

10. Bake at 350° for 1 hour 15 minutes

11. Let stand 15 minutes

12. NOM!

    I’ve just cooked every vegetable in the house, but I’ll be damned if I don’t wish that we had some spinach. It sounds divine!

    • Oh it is delicious. It is one of my favorite things in the entire world. it’s a bit time consuming to make but it is well worth it. Yum!
