Vegetarian Chili of DELICIOUSNESS

Alright, this is one of my favorite recipes when it starts getting cold out. An old boss of mine ( the amazing John!) first showed me this recipe and I have been addicted since.


1 1/2 – 2 lbs soy crumbles (I use Morningstar Meal Starters.) ( You can also use ground beef (or equivalent of turkey/meat substitute just brown and drain first)
2 cups of water
1 28 oz. can of whole tomatoes
1 14 oz. can of dark red kidney beans
1 14 oz. can of pinto beans
2 14 oz. cans of black beans
2 8 oz. cans of white shoepeg corn (regular corn is okay too)
2 packets of taco seasoning (only use 1 if you want less spice to it)
2 packets of ranch dressing mix
— don’t drain the beans before adding to pot, but DO drain the corn

Add all ingredients to a crock pot or cooking pot and stir. Then:
Cook on low for 8-10 hours in slow cooker
or 4-6 hours on high in slow cooker
or 3-4 hours of medium simmer on stove top

It’s great with a little cheese sprinkled on top… Oh so delicious.
