Saturday Sweets: Cookies and Cream Cupcakes

It’s been a while since I’ve put up a Saturday Sweets recipe…so I figure it’s about time to share one of my new favorites.

Cupcakes:

1 cup cake flour

1/2 cup cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon baking powder

1/2 cup unsalted butter, room temp

1 cup sugar

2 eggs

2 teaspoon vanilla extract

3/4 cup buttermilk

A package of Oreos (or some sandwich cookies)

 

 

1. Preheat own to 350

2. Mix together the cocoa powder, baking soda, cake flour, and baking powder in one bowl.

3. Mix the butter and sugar then mix in the eggs and vanilla extract then the buttermilk.

4. Add the flour, dry mixture to the wet mixture and mix until smooth.

5. Line the cupcake wrappers with either whole cookies or crumbles of cookies. (Both work very well)

6. Pour the batter over the cookies.

7. Bake for 16 minutes, rotating once.

 

 

Frosting: 

8 ounces of cream cheese, room temp

2 cups confectioniers sugar

2 teaspoons vanilla extract

1 cup well crushed cookies

 

1. Mix all ingredients together until smooth.
